Fitzsimmons Banana Bread
Time = 10 min prep + 60 min cook

Ingredients
- 1.5 cups AP flour
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp baking powder
- ⅛ tsp salt
- dash nutmeg
- 1 large egg
- 1 cup granulated sugar
- 1 cup mashed ripe banana (approx 2.5 or 3 overripe, black bananas)
- ¼ cup cooking oil
- optional ½ cup currents, raisins, or semi-sweet chocolate chips

Preheat oven to 350°F

In large mixing bowl, combine flour, baking soda, cinnamon baking powder, nutmeg and salt.

In a separate bowl, beat together eggs, sugar, and banana. Add oil and mix well.

Invert cup used for measuring oil over standard size loaf pan to coat pan with residual oil.

Slowly add flour mixture to banana mixture in 2-3 batches. If adding currents or chocolate chips, fold in at this step.

Bake for 55-60 minutes or until wooden toothpick inserted into center comes out clean.

Cool in pan for 10-15 min before serving.
