Date Nut Bread

Ingredients
- 2.25 cups AP flour
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups packed, medjool dates, finely chopped
- 1.5 cups hot water
- 1 cup granulated sugar
- 1 Tbsp melted butter
- 1 egg
- 1 tsp vanilla extract
Directions

Preheat oven to 325F

Finely chop dates and add to boiling water. Let stand for 20 min (water will no longer be boiling).

Beat egg and sugar. Add melted butter.

In a separate bowl, mix salt, baking soda, and flour.

Add flour mixture and date mixture to beaten sugar, alternating between flour and date mixtures. Avoid overmixing. Add vanilla at the end.

Bake 50-55 min and cool before serving.
