Buttermilk Quick Bread

Ingredients--Base Loaf

Directions

  1. Preheat convection oven to 350F. Grease or spray standard loaf pan with non-stick spray.

  2. Whisk together flour, sugar, baking power, baking soda, and salt in medium bowl.

  3. In a separate bowl, whisk together melted butter / olive oil, buttermilk, and egg.

  4. Pour liquid ingredients over dry ingredients. Gently fold until all flour is incorporated and a shaggy dough has formed. Be careful not to overmix.

  5. Scrape batter into the loaf pan and pat into the corners. Bake for 45-50 min. When finished, the loaf should be domed and golden and a toothpick inserted into the center should come out clean. Allow loaf to cool for 15 minutes before removing and slicing.

  6. Wrap loaves in plastic wrap and store at room temperature. Loaves can also be wrapped in plastic and aluminum and frozen for up to 3 months. Thaw as you would normal bread
