Grandma Koch's Date Nut Loaf

Basic Ingredients
- 2 cups pitted dates, chopped
- 1 cup walnuts, chopped
- 1/3 cup Fluffo (shortening)
- 1 cup boiling water
- 5 Tbsp cold water
- 1 tsp soda
- 3/4 cup brown sugar
- 1 tsp vanilla
- 1 egg
- 2 cups enriched flour, sifted
- 1 tsp double-acting baking powder
- 1 tsp salt
Directions

Preheat oven to 350F.

Put dates, walnuts, and fluffo into a mixing bowl and pour boiling water over them. Beat until fluffo breaks into small lumps.

Mix together flour, salt, and baking powder. Set aside

Add cold water, and stir in soda, brown sugar, vanilla, egg, and dry ingredients. Beat until well blended.

Pour batter into loaf pan rubbed with fluffo. Bake at 350F for about 1 hour.

Wrap in foil and store in the refrigerator for several days.
