Soda Bread
Time = 10 min prep + 60-70 min cook
Servings = 1 loaf

Ingredients
- 3 cups AP flour, sifted
- 1/2 tsp baking soda
- 1/2 cup white sugar
- 1 cup raisins
- 1 Tbsp baking powder
- 1.5 cups buttermilk
- 1 tsp salt
- 4 Tbsp butter, melted
- optional, 1 Tbsp caraway seeds

Preheat oven to 350F and grease a round 2 qt casserole

In medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Stir in raisins. With fork, blend in buttermilk and melted butter until even and moist. Dough should be a bit shaggy.

Turn dough into casserole and score an X into the top.

Bake 60-70 min or until a toothpick inserted into the center comes out clean. Remove from baking dish and cool on wire rack.
