Southern Spoon Bread
Time = 15 min prep + 30 min cook

Ingredients
- 2 cups water
- 1 tsp salt
- 2 Tbsp Wesson oil
- 3/4 cup cornmeal
- 2 eggs, separated
- 1 cup milk, full fat
Directions

Preheat oven to 425F.

Heat water to boiling in a 2-quart saucepan. Add salt and oil. Slowly add cornmeal, stirring rapidly to prevent lumping.

Reduce heat, and cook approx 1-2 min, until thicker.

Remove from heat, and allow to cool 10 minutes.

Beat 1 egg yolk at a time into the mixture. Next, add milk and mix well.

Beat egg whites until stiff; then fold lightly into the cornmeal mixture.

Turn dough into a 2-quart oiled casserole dish. Bake for 30 minutes.

Serve immediately, with butter and syrup, or preserves (see notes)
Notes
- To make this a meal, serve with sausage or canadian bacon and a crisp salad.
