Southern Spoon Bread

  1. Preheat oven to 425F.

  2. Heat water to boiling in a 2-quart saucepan. Add salt and oil. Slowly add cornmeal, stirring rapidly to prevent lumping.

  3. Reduce heat, and cook approx 1-2 min, until thicker.

  4. Remove from heat, and allow to cool 10 minutes.

  5. Beat 1 egg yolk at a time into the mixture. Next, add milk and mix well.

  6. Beat egg whites until stiff; then fold lightly into the cornmeal mixture.

  7. Turn dough into a 2-quart oiled casserole dish. Bake for 30 minutes.

  8. Serve immediately, with butter and syrup, or preserves (see notes)

Notes

  1. To make this a meal, serve with sausage or canadian bacon and a crisp salad.
