Dutch Baby
Ingredients
Dry:
- 67 g (½ cup) flour (sifted)
- 38 g (3 tbsp) sugar
- ½ tsp kosher salt
Wet:
- 2 large eggs
- 120 mL whole milk
- 14 g (1 tbsp) butter (melted)
- 1 tsp (5 g) vanilla extract or 1/2 tsp lemon extract
Miscellaneous:
- 2 tbsp butter
- Lemon wedges
- Powdered sugar
Directions
-
Preheat oven to 375°F.
-
Put a cast iron skillet in the preheating oven, with 3 tbsp butter.
-
Mix the dry ingredients.
- I like to sift the flour, because it makes it easier to get a smooth batter with no lumps, but it isn't necessary.
-
Mix the wet ingredients in the following order [1]:
- Eggs (beaten)
- Milk
- Butter (melted, from the preheating skillet)
The order does seem to matter! I don't know why, but I tried mixing these ingredients in a couple different ways, and this gives the best rise.
-
Wait until the butter in the skillet turns a golden brown.
- Often you can start to smell a sweet, nutty aroma when this happens.
-
Mix the wet and dry ingredients to form a smooth, thin batter.
-
Pour the batter into the preheated skillet.
-
Bake for 30-35 minutes; until the edges are puffed and brown.
-
Sprinkle with powdered sugar and serve with lemon wedges.
Notes
-
I'm curious if the order of mixing the butter/flour/eggs matters. My thought is that the butterfat can either: (i) inhibit gluten formation or (ii) be emulsified by the eggs. bind the gluten and the egg will emulsify the butter fat, which
-
melt butter, beat in eggs, mix in milk, milk in flour:
the rim rose, but not that well, and there were big bubbles/peaks in the center as well.
-
melt butter, mix into flour, combine eggs and milk, mix everything
Same as above: rim rose, but not well, and there were bubbles in the middle.
-
beat eggs, add milk, add melted butter
This gives the best rise.

-
I think the best thing is to add the batter when the butter is golden brown, not to wait 10 minutes or anything like that.
-
Try substituting milk and melted butter for 134 g coconut milk. Coconut milk and milk with melted butter are both considered cream substitutes, so hopefully it will work.
Update: This doesn't work at all: you basically get a huge pancake.
