Blueberry Muffins
Time = 10 min prep + 18 min bake

Ingredients
- 1.75 cups all-purpose baking mix (Bisquick)
- ½ cup quick oats
- ½ cup + 2 Tbsp granulated sugar, divided
- ¾ cup milk
- 1 large egg, beaten
- 1 tsp vanilla extract
- 2 Tbsp vegetable oil
- 1 cup blueberries
Directions

Preheat oven to 375°F. Line muffin tin with baking liners.

In large bowl, combine baking mix, oats, and ½ cup sugar.

In a medium bowl, beat milk, egg, vanilla extract, and vegetable oil. Stir liquid mixture into dry mixture until just combined.

Add blueberries and stir gently.

Fill muffin cups approx ¾ full with batter. Sprinkle tops with remaining 1-2 Tbsp of sugar, to your taste.

Bake 17-18 min or until wooden toothpick inserted into the center comes out clean.
