Blueberry Muffins

Time = 10 min prep + 18 min bake

  1. Preheat oven to 375°F. Line muffin tin with baking liners.

  2. In large bowl, combine baking mix, oats, and ½ cup sugar.

  3. In a medium bowl, beat milk, egg, vanilla extract, and vegetable oil. Stir liquid mixture into dry mixture until just combined.

  4. Add blueberries and stir gently.

  5. Fill muffin cups approx ¾ full with batter. Sprinkle tops with remaining 1-2 Tbsp of sugar, to your taste.

  6. Bake 17-18 min or until wooden toothpick inserted into the center comes out clean.
