Chocolate Mousse

Ingredients
- 3.5 oz bittersweet chocolate, coarsely chopped
- 3 large eggs, separate whites and yolks, at room temperature
- pinch of salt
- 1.5 tsp granulated sugar
- whipped cream (garnish)
- fresh berries (garnish)
Directions

Melt chocolate in a bowl over a saucepan on medium heat.

In a separate bowl, beat egg whites with salt until they start of form peaks.

Gradually add sugar while beating, until whites are shiny and hold med-firm peaks.

Spoon 1/4 of whites over chocolate and stir with whisk until almost smooth. GENTLY fold rest of egg whites into chocolate--being careful not to over-fold.

Garnish with whipped cream and fresh berries and serve.
