Slow Cooker Corned Beef and Cabbage
Time = 30 min prep + 8 hr cook
Servings = 8-10 sandwiches

Ingredients
- 5-6 cloves garlic, crushed
- 1 small yellow or white onion, cut into wedges
- 3 cups water
- 2 Tbsp white sugar
- 2 Tbsp white vinegar
- 8 oz beer
- 4 lbs corned beef brisket
- 1 lb carrots, rough cut (or 1 x 1 lb bag of baby carrots)
- 1 lb small red potatos, quartered
- 1 head green cabbage, cut into 7-8 wedges
- 1/2 tsp mustard seeds
- 2 bay leaves
- 8 all-spice berries
- 1/2 tsp salt
- 1/2 tsp pepper --optional if using the spice packet that comes with the beef, omit the spices
Directions

First place onion wedges and garlic at the bottom of your 6-8qt crockpot.Place beef on top of onions and garlic.

Next, mix together water, beer, sugar and vinegar. Pour over beef and then sprinkle seasoning packet over meat. If using homemade corned beef seasoning recipe, simply mix together spices and sprinkle on top of beef.

Cover and cook on LOW for 8 hours.

After 4 hours, add potatoes and carrots. Cover and continue cooking.

When 1 hour remains, add cabbage to the crockpot. Cover and continue cooking for the remainder of the time.
