Turkey and White Bean Chili

Notes: This is a quick chili, but the longer it simmers the better

Directions:

  1. In a large pot over medium heat, saute scallion whites, onion, garlic, and jalapeno until softened approx 5-7 min.

  2. Add turkey and chili spice blend, using spatuala to break up large chunks. Cook until browned, approx 5-7 min. Add flour and stir to combine.

  3. Add stock concentrate, half the salsa verde, 1 to 1.5 cups water. Bring to a boil then reduce to medium and simmer until thickened approx 6-7 min.

  4. Once chili is thickened, stir in beans and bean liquid. Simmer until combined, approx 3-4 min. Taste and season with additional chili spice, salt, and pepper.

  5. To serve, divide between bowls. Garnish with remaining salsa verde, sour cream, and scallion greens.
