Turkey and White Bean Chili

Notes: This is a quick chili, but the longer it simmers the better
Ingredients:
- 1 yellow onion, diced
- 1 clove garlic, minced
- 1 jalapeno, de-seeded and minced
- 2 scallions, separate whites from greens
- 10 oz ground turkey
- 1 Tbsp chili spice blend (cumin, chili powder, red pepper)
- 1 Tbsp flour
- chicken stock concentrate
- 7 oz salsa verde
- 1 can (14 oz) cannellini beans (retain liquid)
- 2 Tbsp sour cream (garnish)
- salt and pepper, to your taste
Directions:

In a large pot over medium heat, saute scallion whites, onion, garlic, and jalapeno until softened approx 5-7 min.

Add turkey and chili spice blend, using spatuala to break up large chunks. Cook until browned, approx 5-7 min. Add flour and stir to combine.

Add stock concentrate, half the salsa verde, 1 to 1.5 cups water. Bring to a boil then reduce to medium and simmer until thickened approx 6-7 min.

Once chili is thickened, stir in beans and bean liquid. Simmer until combined, approx 3-4 min. Taste and season with additional chili spice, salt, and pepper.

To serve, divide between bowls. Garnish with remaining salsa verde, sour cream, and scallion greens.
