Tex-Mex Split Pea Soup
Time = 5 min prep + 4-8 hr cook

Ingredients
- 6 cups water
- 16 oz (1 package) dried split peas, rinsed and sorted
- 5 oz (1 package) Canadian bacon, diced
- 3 medium carrots, thin sliced
- 1 medium yellow onion, chopped
- 3 chipotle peppers in adobo sauce, chopped + 2 Tbsp reserved adobo sauce
- 1/3 cup fresh Italian parsley, chopped
- 1 Tbsp seasoned salt
- 2 cloves garlic, minced
- 2 whole bay leaves
- optional: croutons (garnish)
- optional: sour cream (garnish)
- optional: shredded cheese (garnish)
Directions

Combine all ingredients in slow cooker

Cover and cook on HIGH for 4 hours or LOW for 8 hours

Remove and discard bay leaves. Garnish and serve
