Macadamia Crusted Mahi Mahi
Time = 10 min prep + 25 min cook
Servings = 2-4 (depending upon size of package)

Ingredients
- 1 package frozen or fresh mahi mahi
- 3/4 cup unsalted macadamia nuts
- 2 Tbsp coconut oil melted
- Enough bok choy for the number of people you are serving
- 2 Tbsp soy sauce or tamari
- 1 Tbsp rice vinegar
- 1 tsp coconut oil

Preheat oven to 375

Salt and pepper mahi mahi in a baking dish

Chop or use food processor to grind macadamia nuts (keep the nuts a bit chunkier rather than like a paste)

Mix the chopped nuts with the melted coconut oil (add some garlic salt or basil for extra flavor, or both!)

Put fish in the oven for 7 minutes or until only slightly pink still

Remove and spoon the macadamia mixture onto each fillet and pat down. put back in the oven for 7-12 minutes or until macadamias are golden brown

To cook bok choy, heat the oil until melted in a frying pan. Add soy sauce and rice vinegar. Let it start to steam and then add the bok choy (cut up and washed).

Cook until bright green and barely tender
