Macadamia Crusted Mahi Mahi

  1. Preheat oven to 375

  2. Salt and pepper mahi mahi in a baking dish

  3. Chop or use food processor to grind macadamia nuts (keep the nuts a bit chunkier rather than like a paste)

  4. Mix the chopped nuts with the melted coconut oil (add some garlic salt or basil for extra flavor, or both!)

  5. Put fish in the oven for 7 minutes or until only slightly pink still

  6. Remove and spoon the macadamia mixture onto each fillet and pat down. put back in the oven for 7-12 minutes or until macadamias are golden brown

  7. To cook bok choy, heat the oil until melted in a frying pan. Add soy sauce and rice vinegar. Let it start to steam and then add the bok choy (cut up and washed).

  8. Cook until bright green and barely tender
