Meatball Parmesan Bake
Time = 20 min prep + 1 hr cooking

Ingredients
- 1/2 lb ground pork
- 1/2 lb ground beef
- 1/2 lb ground veal (can sub with equal amounts pork and beef to omit veal)
- 6 cloves garlic, minced
- 1 cup italian breadcrumbs
- 1/2 cup milk
- 1/2 cup asiago cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 1 handful fresh parsley, chopped
- 2 eggs
- salt and pepper (to your taste)
- 1-2 jars of marinara sauce
- 1.5 cups mozzarella, shredded
- olive oil
- 1/2 tsp italian seasoning
- handful of fresh basil, minced (to garnish)
Directions

Preheat oven to 400F.

In a small bowl, mix bread crumbs and milk. Set aside.

By hand, mix meat, garlic, breadcrumb mixture, asiago cheese, parmesan cheese, parsley, eggs, salt and pepper. Mix until just combined, don't over mix!

Using a small cookie scoop, form ball-sized meatballs.

Spray foil-lined pan and place meatballs on sheet.

Bake for 20 minutes, then lower temperature to 375F. Place meatballs on a plate and remove foil. Pour 1/2 cup marinara sauce on the bottom of the skillet to cover.

Place meatballs in a single layer, pour over remaining sauce, cheeses, extra virgin olive oil, and sprinkle italian seasoning.

Cover with foil and bake 20 minutes. Remove foil and bake uncovered for another 20 minutes.

Garnish with fresh basil and parsley.
