Sausage and Polenta

Ingredients

Polenta: 5 cups water 1 tsp salt 1 cup corn meal (coarse, medium-coarse, or "polenta") 2 tbsp unsalted butter 1/4 cup Parmesan cheese

Everything Else: 1 lb Italian sausage 2 cans (29 oz) stewed "Italian style" tomatoes (drained) 8 oz mozzarella cheese (idea: sliced) 1/2 cup Parmesan cheese

Recipe

  1. Preheat oven to 375°F.

  2. Make the polenta:

    • Bring salted water to a boil.
    • Add polenta and stir until thickened (30 min soaked, 50 min unsoaked)
    • Mix in butter and Parmesan cheese.
  3. Sauté the sausage in a large skillet.

  4. Layer the ingredients in a 9x9 glass baking dish in the following order:

    • Polenta
    • Parmesan
    • Sausage
    • Tomatoes
    • Parmesan
    • Mozzarella
  5. Bake for 30 min.

  6. Broil for 3 min to brown the top.

  7. Let stand for 10 min before serving.
