Quesadilla Pie

Ingredients
4 servings:
- 4 large flour tortillas (approx 10 inches in diameter)
- butter
- 1/2 pound cheese, grated (mild or sharp cheddar, or Monterey Jack)
Filling suggestions:
- beans, cooked (black or pinto)
- tomatoes, chopped
- summer squash, chopped
- green onions, chopped
- red onions, chopped
- mushrooms, sautéd to remove moisture
- shredded chicken or pork, cooked
- chilis (cooked green chilis or pickled jalapenos)
- salsa (rojo or verde)
- cumin or chili powder (to your taste)
Garnish Suggestions:
- avocado, chopped
- cilantro, fine chopped
- sour cream
- salsa (rojo or verde)
Directions

Preheat oven to 350°F. Butter the bottom and side of a pie dish, approx the same size as your tortilla.

Place one tortilla on the bottom of the pie dish. Sprinkle cheese over the tortilla. Add chosen fillings , ensuring each layer has a generous sprinkling of cheese.

Top off your layers with one last flour tortilla. Spread a little butter over the surface of the tortilla.

Cover with foil and bake for 30 min at 350F. Remove foil and increase the heat to 400F. Cook for approx 10-20 more minutes, or until the top is lightly browned and cheese is bubbling.

Remove from the oven and let stand for 10 minutes. Serve with avocado, sour cream, and salsa.
