Shrimp tacos with mango avocado salsa
Time = 10 min prep + 10 min cook

Taco Ingredients
- Corn tortillas - 8 or as many as you want
- 1 lb shrimp, de-veined and thawed (amount flexible)
- 1 small white or yellow onion or shallot - 1
- 1-2 cloves garlic, minced
- 1 Tbsp cooking oil
- 1 packet taco seasoning (optional)
- fresh cilantro and limes wedges (garnish)
Salsa Ingredients
- 1-2 ripe mangos
- 1 ripe avocado
- 2 medium, ripe tomatoes (the most flavorful you can find)
- 1/4 cup chopped onion or spicy peppers (optional)
- 1 lime, juiced
Directions

Chop and combine mango, avocado, tomatoes and onion or peppers if using into a chunky salsa. Add lime juice and toss salsa.

Heat oil in a saute pan then add in garlic and stir for 30 seconds followed by onion or shallot.

Saute onion and garlic until translucent and aromatic (2-3 minutes).

Add in shrimp and the amount of taco seasoning that you prefer.

Cook, stirring until shrimp is cooked through or heated through if using pre-cooked shrimp.

Add shrimp mixture to warmed tortilla along with the salsa. Squeeze more fresh lime juice over taco and top with fresh cilantro. Add salt to taste.

- A light, fresh summer taco recipe, very amenable to changing depending on the ingredients and spices you have on hand.
