Shrimp tacos with mango avocado salsa

Directions

  1. Chop and combine mango, avocado, tomatoes and onion or peppers if using into a chunky salsa. Add lime juice and toss salsa.

  2. Heat oil in a saute pan then add in garlic and stir for 30 seconds followed by onion or shallot.

  3. Saute onion and garlic until translucent and aromatic (2-3 minutes).

  4. Add in shrimp and the amount of taco seasoning that you prefer.

  5. Cook, stirring until shrimp is cooked through or heated through if using pre-cooked shrimp.

  6. Add shrimp mixture to warmed tortilla along with the salsa. Squeeze more fresh lime juice over taco and top with fresh cilantro. Add salt to taste.
