Texas Chicken Nachos

Notes: Wedding reception recipe, no actual tortilla chips!
Ingredients
- 1.5 lbs chicken tenders
- 1.5 cheddar cheese, shredded
- 1.5 tsp kosher salt
- 1.5 tsp smoked paprika
- 3/4 tsp chili powder
- 3/4 tsp cumin
- 1/2 tsp cayenne pepper
- 1 Tbsp vegetable oil
- 1 jalapeno (garnish)
- 3 Tbsp green onions, thin sliced
- 6 slices bacon, cooked and crumbled
- ranch or blue cheese dressing (garnish)
Directions

Heat oven to 350F.

Combine and mix spices. Sprinkle and rub over chicken. Place on baking sheet, leaving 1/2 inch between.

Bake 3-4 min. Remove and flip chicken, and bake additional 3-4 min.

Remove from oven and transfer to a cast iron pan. Adjust temperature to 425F. Sprinkle chicken with cheese and jalapeno.

Return to oven and bake until cheese is melted, approx 3-5 min.

Remove and sprinkle with crumbled bacon and green onions. Serve immediately with ranch or blue cheese dressing on the side.
