Blackbean Salad

Servings = 8 servings as side dish or 2 servings as main course

Ingredients
- 1 can (14 oz) low sodium black beans, drained and rinsed
- 1 can (14 oz) garbanzo beans, drained and rinsed
- 1 can (14 oz) red kidney beans, drained and rinsed
- 1 lime, juiced
- 1 small container (approx 10 oz) cherry tomatoes, quartered
- 1 small container (approx 6 oz) feta cheese, crumbled
- 1 small yellow onion, diced
- 1 bunch parsley (to garnish), rough chop
Directions

Drain and rinse beans. Mix together in a large bowl

Quarter cherry tomatoes and dice onion. Add to bowl with beans.

Chop some parsley and mix into salad. Add 1/2 lime juice, mix, then finish with the rest.

Refrigerate up to 6 hours. Add feta crumbles and garnish with parsley right before serving. To make ahead for the next day, hold tomatoes and feta until serving.
